Growing

Plants are grown in garden soil without the use of any synthetic fertiliser, pesticide or herbicide.

A few annuals and tender plants are included in the blends. But as the kettle garden is inspired by 'forest gardening' most are hardy, perennial and hold their own growing alongside other kinds of plants. Many are also native species which are particularly beneficial to our local ecosystem.

Drying

The herbs are picked at the optimum time of year - either as they put out new growth in spring, at the height of their power in summer or one they have completed their growing season in autumn. They are checked and the desired parts are separated and washed. They are then air dried in mesh racks.

Storing

The kettle garden aims to use as little packaging packaging as possible. The blends need to be transferred to airtight container as soon as you get them home. The paper bags the tea is sold in can be recycled or composted.

If kept in a cool dark place, the blends will be good to drink for a year after they are harvested.

Brewing

All blends need to be steeped in hot water for a few minutes. A heaped teaspoon per cup is usually about right. But work out what ratio of herbs to water you prefer and for how long you like each blend steeped.

There are many ways to prevent the herbs ending up in your cup: some tea pots have internal filters and if not you can use a tea strainer when you pour. If you prefer to skip the pot, there are many great reusable tea bags made of stainless steal or fabric.
